Crock Pot Venison Leg


If you're a hunter then you know that the Tibia has some meat and a lot of tendons and silver skin. Because of this, processors generally just make this into ground meat. This recipe is another way it can be used instead of just grinding it up! We process all of our own meat so we have the luxury of choosing what to do with every part of the deer. 

I find it hilarious because, my son who is turning 2 in March, already knows what animals he is eating. A lot of kids freak out when they get 4 or 5 and figure out that they are eating an animal they have loved for years! I don't want that freak out moment. Carter's favorite animal is a cow. So when ever we eat beef we point at it and say, "this is a cow" and he says, "moo! moo!"  We do this with every animal, except deer. Honestly, I'm not sure what a deer says... You need to plan ahead with this recipe. You cook it on high for 5 hours or you can cook it on low for 8 hours in your crock pot. Keep this in mind.

For the Rub:

1/2     teaspoon    Thyme
1         teaspoon     Garlic Powder
1/2    teaspoon     Onion Powder
1        teaspoon     Mediterranean Sea Salt
1        teaspoon     Black Pepper
1/4    teaspoon     Crushed Red Pepper
3        teaspoons    Olive Oil

Mix together and rub onto the leg. Sear the leg in butter, 3-5 minutes each side. Do Not be stingy with the butter!



Into the Crock Pot:

1/2 a Large Onion 
15 cloves of Garlic
2.5 cups Chicken Stock, Venison Stock or Beef Stock (I used my homemade chicken stock).
Place the leg on top of the Onions and Garlic. Put 3-4 sprigs of Rosemary on top of the leg and drizzle a little bit of Balsamic Vinegar over the Leg and Rosemary.

Place the lid on and set it for either 5 hours on high or 8 hours on low. 


This is what you should see when it is all done and ready to eat! It will quite literally fall off the bone! The tendons will have turned into juicy deliciousness! 

You can enjoy this in many ways. Here are a few ways I have paired it in the past: 

  • With some Quinoa and Green Beans
  • With BBQ Sauce on a Hamburger Bun
  • On a Corn Tortilla with Pineapple Coleslaw
  • With Roasted Potatoes and Asparagus
