Fluffy Biscuits

I absolutely love biscuits and I have tried so many recipes to find the PERFECT one. You know, to make the biscuit the perfect amount of fluffy and flaky! I finally figured out an amazing recipe and now I want to share it with y'all!



Ingredients:

  • 2.5 cups All-Purpose flour plus more for dusting 
  • 2 Tablespoons baking powder
  • 1 teaspoon sugar
  • 1 teaspoon of salt
  • 8 Tablespoons cold unsalted butter
  • 1 cup buttermilk 
  • 2 Tablespoons salted melted butter for brushing
If you don't have buttermilk, you don't need it. Just pour a cup of milk and add a Tablespoon of Vinegar to it. Let it sit on the counter for 10 minutes.

How to make the biscuits:
  1. Preheat the oven to 425. Place flour, baking powder, sugar and salt into a food processor. Cut cold butter into small cubes and add to the food processor. Pulse about 6-7 times until it looks like a loose crumble. If you don't have a food processor, just cut the butter into the flour in a bowl with your hands. It's really easy and just takes slightly longer.
  2. Put flour into a large bowl and add in the buttermilk. Stir with a spatula until it is a doughy ball. Pour onto a floured surface. Flour the top of the dough as well and roll into a rectangle about 1/2 inch thick. 
  3. Fold the rectangle in half three times. Repeat this 3 times. The last time you roll it into a rectangle, make sure it is an inch thick. Use a biscuit cutter that is about 2.5 inches in diameter and cut out your biscuits. Place them on a parchment lined cooking sheet. 
  4. With left over dough roll out again and cut out additional biscuits. Repeat until all the dough is used. 
  5. Brush the top of the biscuits with the salted butter and cook for 15 minutes or until golden brown
NOTE: If your oven cooks unevenly make sure to rotate your pan of biscuits half way through.
